Xarel-lo must go down as the most widely-tasted grape no one has heard of, given the popularity of cava and anonymity of its grapes. But before Great-Grandpa Josep toured Champagne and thought “Hm!”, it was made into a quality still wine, as it continues to be. Thick-skinned and highly-colored, Raventós makes of it a textured, high-acid, minerally wine with great fruit, which is pretty much all you could possibly say of a white wine. Lively and strange with ruby grapefruit, lime and lemon, flowers, and a salinity that binds and balances all that citrus, it’s a wine of ineffable wholeness, very satisfying to drink. With surprising weight and length, it’s terrific for a stand-alone glass.
Pairing: Silencis will really shine alongside a saffron plato de mariscos, grilled sardines, or chicken breast with a chive cream sauce.
