Pecorino (not to be confused with Pecorino Romano, a cheese produced from the milk of sheep known to nibble on the grape) has light pink skins and a tannic quality that Pantaleone – an organic estate in the Marche – explores judiciously in this wine. Onirocep's peculiar and pleasing aromatics include lemon verbena, hay, pear and ripe peach. Soft, full-bodied texture wraps around a backbone of zinging acid and light, lifting bitterness.
