Chateau de Breze, an enormous medieval castle that overlooks Saumur, one of the Loire’s most scenic towns, has produced wine since the 15th century in cellars so extensive that the underground passageways line up with the public roads above them. The Chateau’s crisp, chalky sparkler, a blend of Chenin Blanc (75%) and Chardonnay (25%), offers a small amount of dosage (8 g/l), inviting diverse pairings, though it’s a pleasure by itself. Organic winemaking methods, indigenous yeasts, and 24 months of aging on the lees.
